A breast of chicken dredged in seasoned flour sauteed with minced shallots; deglazed with Marsala wine and chicken stock. The sauce was finished with whole butter and served with roasted carrot, asparagus and potatoes.
After a busy day I used some help from the freezer; gnocchi I made a few weeks ago and a tomato sauce w/ meatball & sausage I made at the end of the summer (with garden tomatoes). I topped it off with grated Parmesan and served it with garlic bread.
Sort of like the classic comfort food American Chop Suey except this version doesn't suck. It's a homemade tomato sauce with onions, garlic pepper and fresh herbs with browned ground beef and sweet Italian sausage along with some diced zucchini all tossed with cavatapi. Topped with grated Asiago and served with garlic bread.
Pan seared chicken breast topped with homemade gravy and served with homemade dressing (since it isn't actually "stuffed" anywhere) and steamed broccoli.
Whole pork loin glazed with a homemade teriyaki sauce (soy, garlic, ginger, sriracha, brown sugar) roasted and served with roasted asparagus, zucchini, rice pilaf and a bit more of the sauce.
One of two pans of slow cooked beef bottom round dressed with a smoky sauce and reduced cooking liquid. This was "pulled" like pork for sandwiches for the super bowl. Also made a couple of quarts of creamy cole slaw.

Half of the pork butt from Sunday slow cooked with onion, cumin, garlic and jalapeno then shredded. I served these "taco style" with tortillas, lettuce, cheddar cheese and homemade salsa.
Chicken breast, smoked ham and Swiss cheese but not stuffed and breaded. I sauteed the breast and topped it with the ham & cheese and finished it in the oven - then topped it with a white wine bechamel; served with rice pilaf and steamed broccoli.
