Chicken A La King
Used the leftover roast chicken from Sunday. Sauteed some carrots, onions, garlic and red pepper, added chicken stock and heavy cream which I thickened with a roux. Served it in a puff pastry "boat" with green beans.

Made the last batch of tomato sauce with the final load from the garden.

 Use my Kitchen-Aid with attachments to separate the pulp & juice from the tomatoes.

 All that's left is the seeds & skin.

Roast Chicken & Potatoes
Roasted chicken and potatoes served with steamed broccoli tossed in a wine/butter/crushed red pepper/lemon zest combo. Only had the breast piece with the wing and a thigh.

Here are the left over pieces, breasts & legs, that will be used later in the week.

Cajun Chicken Sandwich
Pan blackened Cajun spiced chicken breast on French bread with bacon, lettuce tomato and sharp cheddar cheese; served with seasoned fries.

Pork Milanese
A slice of pork loin pounded thin, breaded and sauteed topped with a wine butter sauce with diced fresh tomato, basil parsley, shallot and onion; served with whole wheat penne tossed in the same sauce and roasted green beans.

Grilled Chicken Breast
Chicken breast marinated in a spicy BBQ sauce like concoction grilled along with asparagus and sweet potato wedges and served with some steamed broccoli.

Using up basil at the end of the season.

 Picked washed and spun the basil leaves dry.

Processed the basil (like pesto) with some oil and salt and pepper. After that I put into ice cube trays and freeze to use through the winter.

Cajun Mahi Mahi
Mahi Mahi fillet coated with Cajun spice and pan blackened served with lemon basil rice and green beans.

Sliced home made meatballs and provolone cheese on crusty bread grilled in a pannii press. Served with chips and home made tomato sauce for dipping.

Home made meatball, pepperoni, Hungarian wax pepper, green bell pepper, fresh basil, four cheese blend and tomato sauce on a hand made crust.

Turkey Divan
Roasted breast of turkey in a rich cheddar cheese sauce over white rice with steamed broccoli. Typically the broccoli is in the sauce but that can lead to mushy over cooked broccoli - not a fan of that.

Home made sauce with meatball (home made) and sausage over ziti; served with garlic bread. The tomatoes in this sauce were on the vine about a week ago.

Grilled Spice Rubbed Pork Loin
Pork loin coated with a home made spice rub was grilled and served with sauteed vegetable medley and tomato basil  "rice-sotto". I have made this easy version of risotto for years and recently saw Lydia Bastianich make it; a far less "needy" preparation.

Haddock fillet topped with seasoned crumbs and baked with white wine. Served with baked potato and green beans.

A last minute invite to dinner and I had to bring something. Luckily there are still plenty of tomatoes and basil in the garden and I always have Parmesan, garlic and olive oil on hand - easy.

Labor Day BBQ at a friends house

Grill Roasted Turkey Breast
Brined turkey breasts coated with a home made spice rub and grill roasted. I brought these to a Labor Day BBQ along with spicy Thai peanut noodles and brownies. There was a lot of food at the BBQ - as always.

Garlic Shrimp & Broccoli
Shrimp were sauteed with chopped garlic, crushed red pepper and shallot, deglazed with white wine and lemon juice and finished with whole butter and chopped parsley. The shrimp & sauce were tossed with fettuccine and steamed broccoli.

Grilled Chicken Mexicali
I marinated a chicken breast (quickie marinade) and made a salsa with garden tomatoes, hot pepper, onion, garlic cilantro, cumin & lime juice. The chicken was grilled, topped with the salsa and cheddar cheese and put under the broiler. I served it with grilled asparagus, zucchini and potato "planks".

Beef Burgundy
Due to the heat wave I planed on a crock-pot meal that I prepped yesterday. Browned beef & vegetables were placed in the crock-pot with beef stock, burgundy wine, garlic, bay leaf and seasonings, placed on low heat for hours until the beef was tender. I strained the cooking liquid and thickened it with a roux. I added the thickened sauce to the beef & vegetables; served over buttered egg noodles.

Grilled Chicken and Broccoli Alfredo Pizza


 The crust was grilled and then I topped it with an Alfredo-ish sauce (stock, cream and Parmesan cheese) with caramelized onion and garlic added. Grilled chicken breast, blanched broccoli florets, fresh basil and a four cheese blend were put on top of the sauced crust.

The pizza was placed under the broiler to heat through and melt the cheese.
