Sauteed Chicken with Tortellini
Diced chicken breast sauteed with zucchini, broccoli, diced carrot, onion, red pepper and garlic; finished with white wine, chicken stock, a bit of cream and grated Parmesan. All of this was tossed with tri-colored tortellini and topped with more grated Parmesan.

Turkey Sandwich

Usually eat out on Saturday night so I made a turkey sandwich for lunch on French bread with bacon, tomato lettuce and hot peppers.

Pork Fried Rice
Diced left over pork loin stir fried with egg, zucchini, diced green beans, onion, pepper, garlic ginger and day old basmati rice. I like to "beef up" the vegetables when I make fried rice. I also put in some Thai basil and parsley.

Chicken breast marinated in olive oil, red wine and balsamic vinegars with fresh herbs from the garden; basil, rosemary, sage, parsley and thyme, grilled and served with roasted red potatoes and broccoli.

Half pound Ground beef patty coated in Cajun spice and pan blackened on a kaiser roll with lettuce, tomato, red onion American cheese and bacon. Served with seasoned fries.

Chicken & Broccoli "Alfredo"
Not quite Alfredo more like Alfredo Lite. Chunks of chicken breast sauteed with onion, garlic and red pepper. Deglazed with white wine and chicken stock; finished with a splash of heavy cream and grated Asiago cheese. All tossed with cavatapi pasta and al dente broccoli. Topped with more grated Asiago. Much lighter than the classic.

store bought BBQ sauce, balsamic vinegar, hot sauce and seasonings; grilled along with marinated zucchini and potato "planks".

Thinly sliced pork loin stir fried with green beans, red pepper, garlic and ginger; finished with a sauce of soy, mirin, oyster sauce, sesame oil and sriracha sauce - very spicy. Served over basmati rice.

Roast Chicken Breast
Bone in chicken breast, seasoned and roasted @ high heat. Served with broccoli that I steamed and then tossed in a mixture of fresh lemon juice, butter, garlic, salt, pepper and crushed red pepper; topped with grated Asigo cheese. Also had a half a baked potato - yes, half - a small baked potato is 7-8 oz.; why go through the task of weighing raw pasta only to gorge on a giant potato? Besides, I'd rather have more meat & veg.
