Green Beans in foil before I added the stock & wine and folded it up. I threw it on the grill to steam.

Grilled Chicken
Spice rubbed chicken (leg & thigh) grilled and served with grilled potato "planks" and green beans with slivered garlic, olive oil, chicken stock & white wine.

Gnocchi
Homemade gnocchi and sauce with meatballs & sausage. Made the gnocchi a couple of weeks ago & froze them. The sauce was made last year from garden tomatoes. Pulled both from the freezer for an easy dinner.

Beef Teriyaki
Thin sliced top sirloin marinated in a combination of soy, water, mirin, brown sugar, Sriracha, garlic and ginger over night and grilled. Served it with rice pilaf and a saute of snow peas, carrot & broccoli.

Spice Rubbed Pork Loin
Pork loin coated with a spice rub, grilled and served with a baked potato and a saute of green beans, zucchini, sliced pablano peppers and slivered garlic. The vegetable was finished with white wine & chicken stock.

Cajun Spiced Chicken
Chicken breast coated with homemade Cajun spice and grilled. Served with grilled asparagus, grilled potato and green beans. I put the beans in foil with chicken stock, white wine, sliced garlic, salt & pepper in foil and threw the packet on the grill to steam.

A crust made with some whole wheat flour topped with, tomato sauce, sauteed sliced garlic, pepperoni, caramelized onion, pablano & green pepper, diced chicken breast and pizza cheese blend.

Thin sliced roast beef on French bread with lettuce, tomato, hot banana peppers and melted sharp cheddar cheese; served with tater tots -"Are you gonna' eat your tots?".

Bay Scallops Scampi
Bay scallops sauteed with minced onion, chopped garlic, crushed red pepper and lemon zest finished with white wine and whole butter; tossed with fettuccine and steamed broccoli. Bay scallops get a bad wrap usually because people tend to over cook them. They need about 3 minutes of cooking time. I saute them first, remove them, and then toss in the final dish to season with the sauce.

Chicken Stir Fry
Thin slices of chicken breast stir fried with Napa cabbage, carrot, red pepper, poblano pepper, zucchini, snow peas, ginger, garlic and scallion; finished with, white wine, stock, soy sauce, oyster sauce, Thai basil and cilantro. The sauce was thickened with corn starch and served over basmati rice.

Marinated in a mix of bbq sauce, Worcestershire, sriracha, balsamic vinegar and spices. Grilled along with asparagus, zucchini and potato "planks".

Cheesy Macaroni with Turkey
I donned my cafeteria hair net and made macaroni & cheese with leftover smoked turkey (dark meat). I made the sauce with cheddar, Asiago and American cheese; yes, American, hard to believe, but a processed cheese helps stabilize the sauce - just a few slices worth. The smoked turkey made it taste like I added smoked Gouda. Served it with steamed broccoli.

Smoked Turkey Breast
Broke out the old school Webber charcoal grill and smoked 1/2 turkey; finished it in the oven. Made cheesy twice baked potato and fresh green beans to go with.
