Leftover Chicken
I made a cheddar cheese sauce and took the leftover chicken from Sunday, added it to the sauce and heated through; served over mashed potatoes with steamed broccoli - oops, spilled sauce on the broccoli.

Baked Manicotti
I didn't make these. REALLY good manicotti with a meat sauce and a cheese & meat filling using no boil lasagna noodles instead of those horrible tubes. Served with an "old school" iceberg salad and bread - left overs for lunch today.

Pork Picatta
Boneless pork loin pounded thin, seasoned, dusted with flour and sauteed with shallots; deglazed with white wine & lemon juice, finished with cream, butter, lemon zest and whole butter. Served with steamed broccoli and rice pilaf.

 My first foray into "beer can chicken"; not particularly impressed. I usually remove the backbone and some of the ribs and roast/broil the chicken. This method renders moist flesh and crispy skin. I saw this recipe on America's Test Kitchen, an excellent show, and usually have good results with any of their stuff. This was a lot of extra work (loosening the skin, rubbing it w/ a salt/baking powder/pepper mixture and letting is sit for an hour. In actuality the skin, which was supposed to be crispy was not. Oh well.

Served a wing w/ breast portion and a thigh with green beans and mashed Yukon Gold potatoes topped with reduced cooking liquids.

"White" Pizza
A homemade dough topped with an Alfredo like sauce (stock, cream, garlic and a lot of grated Parmesan) roasted garlic, jalapeno peppers, red peppers, chicken breast, pulled pork, broccoli and a little mozzarella.

Beef Stroganoff
I cut up the leftover slow cooked beef from Sunday and heated it up in the gravy also from Sunday. The heated beef was finished with sour cream and served over buttered egg noodles with a saute of zucchini, carrot, broccoli, red pepper, onion and garlic.

Pulled Pork
I cooked a pork butt in slow cooker w/ onion, bay leaf and liquid smoke (since I wasn't really using smoke) & water. After it was done, I pulled it into pretty large pieces and set it aside on a sheet pan. I took the cooking liquid, degreased it, and boiled it down to about 3/4 of a cup. Then I added some store bought bbq sauce to the reduced cooking liquid and coated the pieces with the mix  and put them under a low broiler to reheat and create a crust/bark. Served it with baked potato and green beans.

Sliced chicken breast stir fried with snow peas, red pepper, carrot, onion, ginger and garlic finished with white wine, soy sauce, oyster sauce, sriracha, stock and sesame oil; tossed with noodles.

Baked Cod Fillet
Cod fillet baked in wine & stock with a seasoned crumb topping; served with rice pilaf, roasted asparagus and a saute of zucchini, onion, garlic and fresh tomato - one of the last garden tomatoes.

 Made gnocchi early in the day and froze them for future use.

 Browned a nice hunk of bottom round before I put it in the slow cooker with red wine, carrot, garlic, onion, tomato, stock bay leaf and thyme to yes, slow cook.

After a few hours the bottom round was done. I strained the cooking liquid and made gravy; served it with mashed potatoes and steamed broccoli - along with the carrots that cooked with the beef.

Chicken & Broccoli "Alfredo"
Chunks of chicken breast lightly floured and seared in olive oil with minced shallot and garlic, deglazed with white wine finished with heavy cream, grated Parmesan cheese and a bit of whole butter; all of this was tossed with steamed broccoli and cavatapi pasta.

Leftover Turkey & Gravy
Heated up the leftover gravy from Monday and diced up the remaining breast meat; served over mashed potatoes and steamed broccoli. Very cafeteria except the potatoes are real, the broccoli is al dente, the gravy was delicious and the turkey wasn't formed turkey product.
