Blackened Mahi Mahi
Mahi Mahi fillet dusted with my Cajun spice blend and pan blackened; served with a saute of snow peas, carrot and red pepper & rice pilaf.

Chicken Scampi
A breast of chicken lightly floured, sauteed with minced shallot & garlic then deglazed with white wine and lemon juice; finished with lemon zest, parsley and whole butter - served with roasted green beans, sweet and red potatoes.

 The filling is the last of the turkey I cooked Sunday (froze 1 breast) with celery onions carrot cut green beans and red potatoes in a rich turkey gravy.

 Baked with a homemade pie crust.

A slice of center cut pork loin sauteed with shallots, deglazed with white wine and chicken stock which is reduced and finished with a little whole butter; served with rice pilaf and roasted asparagus.

The second meat pie I made & froze a few weeks ago. Topped this with beef gravy and served it with steamed broccoli.

Roast Turkey
Took advantage of a day off & roasted a whole turkey, served it with mashed potatoes, roasted green beans and a gravy made from the pan drippings.

Corn Chowder
Went out for dinner, but made a pot of corn chowder in the afternoon; corn, onion, potato and bacon in a rich base with cream. I ended up giving most of it away.

ManicottiA cheese blend with browned beef & sausage fill these manicotti that are baked in a meat sauce topped with provolone and mozzarella; served with an "old school" iceberg lettuce salad.

A rip off of Tory's/T.C. Lando's Cherry Bomb sandwich; shaved steak BBQ sauce, diced cherry peppers, provolone & lettuce. Served with tater tots and a pickle. The "real" version also has pepperoni - overkill.

Pork loin pounded thin, coated with cracked black peppercorns seared with diced shallot, deglazed with brandy and stock; finished with a bit of heavy cream and reduced.

Served with rice pilaf and a saute of zucchini, snow peas, red pepper & broccoli.

 Wine Braised Chuck Loin Roast

 Seared the chuck loin roast and braised it in a mixture of beef stock Zinfandel wine with garlic, onion, herbs and seasonings.

Served with sauteed green beans, mashed potatoes and beef gravy made from the cooking liquid.

The leftover turkey breast from Sunday was diced and tossed in with  sauteed carrot, onion and celery in a gravy made with homemade turkey stock (bones from the breast); served over rice with steamed broccoli.

Chunks of chicken breast seared with green pepper, onion, garlic and celery; deglazed with white wine and stock and simmered with tomato, tomato sauce, fresh herbs and green beans. The dish was served with crusty French bread.

Rump Steak
Not a real popular cut, but delicious when cooked properly. I seared the steak in a smoking hot saute pan and finished it in a slow oven - the key is to cook this to medium/medium rare, no less. Served the steak with steamed broccoli and fettuccine Alfredo with home made fettuccine.

Had the noodles with sausage, meatball & homemade sauce - prior to a generous shower of Parmesan cheese.

BBQ spice rubbed chicken breast with bacon, cheese, tomato and lettuce; served on French bread with seasoned fries.

Made a massive batch of chili.
