Mixed fine dry bread crumbs with my Cajun spice blend, coated one side of the haddock fillet and seared - finished in a low oven. Made a garlic beur blanc (wine - butter - lemon sauce) which I tossed garden green beans in and topped the cooked fish with; served with roasted potatoes seasoned with smoked paprika.

I sliced a slightly overgrown zucchini from the garden into about 2" rounds, hollowed them out and filled them with a meat stuffing (ground beef, sweet Italian sausage, oregano, basil, parsley onion, garlic, parmigiana, bread crumbs, cream and seasonings). They were roasted then topped with provolone cheese and home made tomato sauce. Served them with a side of penne rigati tossed in the same sauce.

Chicken breast cutlets lightly floured and sauteed with minced onion, deglazed with white wine, lemon juice and chicken stock; finished with lemon zest, basil and a touch of whole butter. Served with a mixed vegetable sauteed and rice pilaf; nice to have a home cooked meal back from vacation.

Back today from ME; time for a vegetable - eating way too many restaurant meals. Pan roasted asparagus, and zucchini with sauteed onion, red pepper, Hungarian wax pepper, Serrano pepper, broccoli, onion and garlic. The sauce was white wine, stock and a little heavy cream. All this was tossed with cavatapi and topped with Parmesan cheese.

The coated loin was grilled and served with grilled balsamic marinated zucchini (from the garden) and Spanish rice with Serrano chiles.
