 Black Pepper pork Loin
Pork loin pounded thin, coated with cracked black peppercorns seared with diced shallot, deglazed with brandy and stock; finished with a bit of heavy cream and reduced.

Served with rice pilaf and a saute of zucchini, snow peas, red pepper & broccoli.
